Symrise has expanded its Symvision AI platform to include AI-powered tools for formulation prediction, allowing manufacturers to speed up flavor and food development. The tool supports “targeted flavor design” and specifically addresses low sugar and low sodium products, meeting growing consumer demand for healthier lifestyle choices.

This toolkit uses data to predict sensory properties in future product formulations. Advanced AI capabilities will help flavorists predict the optimal formulation and its sensory performance with “high accuracy,” the Germany-based company said.

“Evolving consumer expectations, sudden price changes, and supply chain events are driving the need for innovation and rapid formulation adjustment. Symvision AI does just that, enabling us to innovate faster and smarter,” said Leif Jago, global marketing manager for food and beverage at Symrise.

The Symvision AI design toolbox also predicts the impact of formulation changes, guides flavor development, and helps manufacturers respond “quickly and accurately” to market changes, he added.

Flavor profile prediction

Symvision AI’s sensory design capabilities consist of an “interactive dashboard cockpit” that visualizes prescriptions and sensory properties.

For example, the platform helps predict the resulting sweetness profile and identify gaps in taste intensity during the development of reduced-sugar formulations.

We then guide you through relevant formulation options, such as symlife’s taste-balancing solutions, to fill those gaps. The company says this process results in “optimal taste in both new and reformulated products.”

Optimization of flavor combination

The tool helps manufacturers optimize the taste of F&B products with “science-based” formulations, increasing sensory appeal and market relevance.

It also offers customized solutions by developing recipes with what Symrise calls “a unique combination of deep flavor expertise and machine learning.” These recipes can easily be adapted to individual ingredient limitations or regulatory changes.

Manufacturers can also accelerate innovation cycles and get to market faster through predictive modeling and impact prediction.

“We are combining machine learning with the deep expertise of specially trained flavorists. This approach shortens development cycles and unlocks exciting possibilities in flavor creation,” said Gerhard Krammer, senior vice president of research and technology at Symrise Food & Beverage.

Symrise uses a “new flavor design” approach with a multi-step process to more quickly identify ideal formulation options.

It begins with ingredient selection to select the most promising raw materials from Symrise’s proprietary portfolio, followed by prototype selection. This step is followed by sensory and consumer testing to validate sensory properties and build predictive models.

The final step is “Flavor Creation Refinement”, which provides optimal market solutions based on the flavorist’s expertise.
